Looking for sweets for a sweetie? Did you know that right here in the hamlet of Wallkill, a French-American chocolatier is handcrafting gourmet delicacies? Hudson Valley Chocolates offers all sorts of confections, from chocolate assortments and truffles to caramel chocolate apples, chocolate pretzels, and marshmallow pops, all handmade right here from the finest ingredients. “Her chocolates are absolute works of art!” writes a happy connoisseur on Facebook. “I LOVE good chocolate. I’ve never tasted anything to compare to it until I had chocolate from Hudson Valley Chocolate!There are many flavors of chocolate bars available in dark, milk, and white varieties; and caramels handmade from Hudson Valley cream. There are bespoke assortments, fruit-dipped chocolate and Hot Chocolate Bombs, holiday and wedding favors—a mouthwatering variety of offerings to melt the heart of any chocolate lover, anytime.

Founder Stephanie Glaisek, like most all of us, first became acquainted with the wonders of chocolate when she felt it melting on her tongue. Her passion led to a fascination with creating it and, at 17, she became the first and youngest apprentice to renowned French chocolatier Henri Le Roux, moving on to work for the Blanes patisserie-chocolaterie in Avignon.

Moving to New York in 2000, Stephanie worked as a pastry chef for the Relais et Chateau Guide-rated Castle at Tarrytown. The Hudson Valley restaurant world welcomed her, and she found herself a manager by 2004, but her passion continued to beckon, and she made chocolate gifts for family and friends.

You can guess what happened next. Word got around, people clamored for more, and Stephanie realized she had a full-time job all cut out for her. She knew how the dream should go: simple, elegant deliciousness in elegant, understated packages (unless, of course, a customer wanted something fancier), no artificial ingredients or preservatives, ever.

As Creative Director and Chief Production Officer for Hudson Valley Chocolates, Stephanie is now living her dream every day all day long. Her two children adore their positions as Chief Tasting Officers, and also help there in lots more ways.
